Recently, I had the joy of sitting down with Denis Chiappa, owner of Conquering Cuisine in Doylestown, Pennsylvania, to talk about his unforgettable food and wine adventure through Italy with Collette Tours.

“People in Italy welcomed us into their homes — what an amazing experience!” Denis said. “Cheers to Collette, our tour company, for creating a smaller, more intimate group. We had experiences you simply can’t get when traveling with a crowd of 60 following a flag through the streets.”

From lunches with locals to private home visits, this trip went far beyond sightseeing. It became a deep dive into Italian hospitality, flavor, and connection.


From Kitchen to Culture: The Right Time for Adventure

When I asked if he ever imagined Conquering Cuisine would lead him to Italy, Denis smiled.

“Yes and no,” he said. “We’d had requests for years to do something like this, but it never felt like the right moment. This time, it did. The business was in a good place, and the right person came along and asked, ‘Do you want to do it?’ — and I finally said yes.”

That “yes” led to a trip that blended food, travel, and education — the three passions that have defined his culinary career.


What’s Next for Conquering Cuisine Adventures

Denis doesn’t plan to stop at Italy. “I’d love to do more adventures like this — maybe France, Spain, or Argentina,” he said. “Even places in the U.S., like Louisiana or Napa Valley. I want to explore great food scenes that are a little off the beaten path.”

Future trips might include wine experts or regional chefs, bringing together culture, learning, and, of course, incredible flavors.

“Whether it’s a day trip to New York or a week in Europe, I love watching people light up when they discover something new — that’s what makes it worth it.”


Traveling Together: Food, Wine, and Love

When asked about special moments with his wife on the trip, Denis grew thoughtful.

“We’ve been so busy raising kids that we rarely get to just stop and do something together. To travel, enjoy the food and wine we love, and meet amazing people — it’s been a gift.”


A Notebook and a Lesson in Listening

“I brought a notebook everywhere on this trip,” Denis laughed. “My memory’s not as good as it used to be — but really, I just don’t want to forget the details. When I travel, I don’t want to reinforce what I already know. I want to learn.”

He explained how his perspective shifted after visiting a pasta factory.

“As Americans, we sometimes picture Europe as being fully sustainable — that every farm is organic and every process is clean. But what I learned is that, even here, they’re still on the journey too. Maybe a little further along, but still striving to do better every day. It was humbling, and also comforting. We’re all learning. We’re all growing.”

That curiosity and openness — the willingness to listen and evolve — is exactly what makes Denis’s trips so special.

“I don’t come here to tell my story,” he said. “I come to really listen and absorb what others are teaching us.”


The Art of Translation (and Connection)

Denis also admired how well the local guides communicated across cultures.

“Our tour manager, Jacopo, spoke four languages — English, Spanish, Italian, and French — and he could shift between groups effortlessly. The people here are so deliberate in their words. They’re not just translating — they’re helping you feel what they mean.”

From listening to the cheesemaker at Fattoria Pianpocino to winery visits and cooking demos, every stop deepened the group’s appreciation for food as a universal language.


Final Thoughts: The Joy of Discovery

Whether it’s a trip through Tuscany, or a one-day food tour in New York, Denis’s philosophy is simple:

“I love when people come back and say, ‘I found this pasta I’ve been looking for!’ or ‘We discovered this little café — it was amazing.’ That excitement is what keeps me doing what I do.”

In the end, Conquering Cuisine’s Italy trip wasn’t just about great meals — it was about connection: to people, places, and the flavors that bring them together.
