Where Wine Becomes Memory: An Evening with Fallen Mountain Wines

I recently attended an invite-only event where Fallen Mountain Wines was the main attraction, but it wasn’t just about wine. It was about connection, story, fellowship and intention. The kind of evening that gently reminds you to slow down and actually feel and experience the moment. That’s what great wine, food, and company do.

Fallen Mountain Wine

I was especially grateful for the opportunity to reconnect with friends I met nearly 15 years ago—mortgage brokers, attorneys, bankers, real estate professionals, and entrepreneurs.

Each person I connected with was warm, open, and genuinely engaging. You could tell right away that this was curated. The hosts have clearly built their circle with intention and you felt that the moment you walked in. It felt special to be part of it.

Throughout the evening, the winemaker and partners shared the stories behind Fallen Mountain Wines—their journey, their process, and the passion that fuels it all.

They spoke about the varietals, the harvest cycles, the seasons, and the hands-on work required to bring each bottle to life. What stood out most was their commitment to quality over everything, not volume, not trends, just craftsmanship. The vineyard is based in western Colorado, an unexpected but remarkable region for winemaking.

One story, in particular, stayed with me. The winemaker shared how he grew up learning the craft from his family—absorbing the discipline, the detail, and the work ethic from a young age. It wasn’t until later in life that he had his “aha” moment when he truly understood and appreciated what had been passed down to him. You could feel the sincerity in his words.

The event itself took place in a private home—an ideal setting that made the entire experience feel both elevated and personal.

Six thoughtfully designed stations were set up throughout the property, each pairing a wine with a complementary dish. It encouraged movement, conversation, and discovery allowing guests to experience the wines in a dynamic, interactive way.

The Wines That Defined the Night

What made the evening unforgettable wasn’t just the setting, it was the intention behind each pour and bite. The history that created this moment. Every wine felt like a moment of its own.

2023 Vignoles (The Snow Vineyard, Grand Valley AVA, Colorado)

Bright and refreshing with tropical notes of banana, pineapple, and under-ripe apricot. Lively, expressive, and perfectly suited for lighter fare and easy conversation.

The Cuisine: Signature Sushi Boat prepared by Papa’s Raw Bar
Featured Pairing: Hibiscus Roll
The Rationale: This bright and lively Vignoles, with its tropical notes of pineapple and banana, is the perfect companion for the floral elegance of the Hibiscus Roll. The wine’s crisp acidity cuts through the richness of the sushi, while the hibiscus notes mirror the wine’s stone fruit finish.

2024 Rosé of Chambourcin (Grand Valley AVA, Colorado)

Light, crisp, and effortlessly inviting. The kind of wine that opens a night—fresh, vibrant, and full of possibility.

The Dish: Argentinian Choripán with Chimichurri prepared by Chef Daphney Hoover
The Rationale: A bold, street-food inspired pairing for the vibrant Rosé. The juicy, grilled beef sausage and the bright, herbal acidity of fresh chimichurri highlight the wine’s red berry notes and balance the crisp finish of the Chambourcin.

2024 Zweigelt (Cañon Vineyard, Grand Valley AVA, Colorado)

Seamless and medium-light with fine tannins and notes of dark roast coffee, blueberries, and raspberry preserve. Smooth, balanced, and just layered enough to keep you thinking about it.

The Dish: Grilled Espresso-Rubbed Beef over Sharp White Cheddar prepared by Chef Daphney Hoover
The Rationale: This medium-light red features sophisticated aromas of dark roast coffee and raspberry preserves. The espresso rub on the charred beef highlights the wine’s roasted notes, while the sharp cheddar mirrors the wine’s seamless tannins.

2023 Gamay Noir (Castle Vineyard, Grand Valley AVA, Colorado)

One of my personal favorites. Lean and vibrant with aromatics of candied red apple, cotton candy, and forest floor. Playful yet grounded, with a quiet complexity that paired beautifully with earthy, savory dishes.

The Dish: Grilled Apple-Cider Chicken with Smoked Gouda prepared by Chef Daphney Hoover
The Rationale: To highlight the wine’s “Candy Apple” and “Forest Floor” aromatics, we use Smoked Gouda for earthiness and- a bright apple-cider glaze to create a direct bridge to the fruit harmony.

2023 Barbera (Cougar Rock Vineyard, Walla Walla AVA, Washington)

Another standout for me. Rich, expressive, and confident. A deeper, more grounded wine that felt like a natural transition into meaningful conversation.

The Dish: Signature “Pasta Fusion” Mini-Tasting prepared by Chef Daphney Hoover
The Rationale: An architectural bite designed to match the wine’s dense structure. The high acidity of the Barbera cuts through the creamy Caribbean-infused vodka sauce, while the spices in the beef sausage highlight the wine’s signature baking spice and dark fruit profile.

2023 Syrah (Cougar Hills East Vineyard, The Rocks District AVA, Washington)

I’ll be honest, Syrah isn’t usually my go-to, but this one changed my mind. Voluminous and soft with refined tannins and notes of sweet smoke, raw cocoa, and dark plum.

The Dish: Mima’s Argentinian Beef Empanadas prepared by the hostess
The Rationale: This voluminous Syrah features “Sweet Smoke” and “Dark Plum” character. It is the perfect partner for Mima’s traditional beef and egg filling. The savory richness of the empanada stands up to the wine’s bold, complex finish.

The Experience Beyond the Glass

What made the night truly special wasn’t just what was poured—it was everything surrounding it. The food, atmosphere and the people.

There was also a strong sense of purpose, with connections to meaningful organizations like Honor Flight South Florida, adding another layer of impact to the evening.

From thoughtfully prepared dishes from Chef Daphney Hoover, which created an atmosphere that felt both elevated and effortless, everything complemented the wines in a way that made the entire evening feel seamless. A special thank you to Troy & Cassie of Papa’s Raw Bar for its fresh seafood, vibrant energy, and community-driven spirit.

With Gratitude

An evening like this doesn’t come together by accident. It’s thoughtfully created by people who care deeply about the experience. Every detail was intentional from the pairings to the presentation. It elevated every sip and every conversation.
